Fats, proteins and carbohydrates are the main sources of energy in human nutrition. The relationship between these three has been the subject of much debate in nutritional science over the years. Carbohydrates were important to our ancestors because many carbohydrate-rich foods were easy to store without refrigeration compared to protein-rich or high-fat foods such as meat or fish. While humans consumed a largely low-calorie diet and experienced seasonal changes in food availability and abundance for a long time, food supply has changed in the past 100 years. We now live in abundance, which is leading to a drastic increase in man-made and chronic diseases like diabetes mellitus. High, unregulated blood sugar levels in combination with the accumulation of advanced glycation end products appear to be the main causes of the development of diabetes. Therefore, it is discussed how healthy carbohydrates are and whether they should be avoided in the diet.
